This mix makes a wonderful bean soup that is a tradition with the Cajun/Creole folks who make Bourbon Street in New Orleans one of the most unique places in the United States. Although New Orleans claims this soup as its own, most likely it came to New Orleans with Creole settlers from Africa or the Caribbean Islands, however, the mere addition of the "bigger than life" atmosphere of Bourbon Street is more than enough to make it uniquely New Orleans.
